Thai Shrimp & Coconut Rice

Ingredients
1/2 c fresh squeezed lime juice
2 T sugar
2 T fish sauce
1/2 t chili paste (sambal olaek)
1 lb shrimp, thawed, peeled, deveined
1/2 c cilantro
Instructions
- combine first 4 ingredients & bring to a boil in a frying pan
- lower heat, add shrimp and cook until just pink.
- serve over jasmine or basmati rice that has been cooked with coconut milk. (use 1/2 cup coconut milk to each cup rice; add water to make up correct liquid volume for cooking rice)
- top with cilantro
