Lou's Potato Casserole

From Mary Lou Kroeze.

Ingredients
4 large russet potatoes
1 cup shredded cheddar cheese
4 tablespoons butter
2 tablespoons chopped green onions
1 cup sour cream

Instructions

  1. Boil potatoes, let cool, peel, then shred.
  2. Mix all but 2 tablespoons of butter together and place in 9x13 baking pan.
  3. Dot the top with the last 2 tablespoons of butter.
  4. Bake at 350 degrees for 30 minutes. (Can also be made ahead and refrigerated; bake for 45 minutes.)
