Chocolate Cupcakes

Ingredients

Cupcakes
1/2 cup water
2 squares Baker's chocolate
1 cup flour
3/4 tsp. salt
1 cup sugar
1/2 tsp. baking soda
1/4 cup olive oil
1/4 cup milk
1 egg

Frosting
1 cup sugar
1/4 cup cocoa powder
1/4 cup unsalted butter
1/4 cup milk
1 tsp vanilla

Instructions

Cupcakes

  1. Heat water in microwave until boiling. Add chocolate and stir until chocolate is melted.
  2. Sift together flour, salt, sugar and baking soda.
  3. Add olive oil, milk, eg and cooled chocolate mixture.
  4. Beat 4 minutes.
  5. Pour into paper-lined pan.
  6. Bake at 350 for 20 minutes.

Frosting

  1. Boil first 4 ingredients 1 minute.
  2. Add vanilla, let cool.
  3. Beat smooth.
