Baked Spaghetti

1 lb italian sausage*
1 small onion, chopped
4 cloves garlic, minced
1/2 teaspoon crushed red pepper
1/2 tablespoon dried basil
1/2 teaspoon dried oregano
3 cups red spaghetti sauce
1 lb spaghetti
1 cup mozzarella cheese
1/2 cup ricotta cheese
1/4 cup grated parmesan cheese


  1. Brown sausage and drain fat.
  2. Cook spaghetti, drain
  3. Add onion, garlic, red pepper, and herbs to sausage and cook for about 5 minutes or until onion is translucent.
  4. Add sauce to the mix and simmer for 10-15 minutes
  5. Add spaghetti and mix well.
  6. Add 3/4 cup of mozzarella and the ricotta cheese, mix well.
  7. Transfer to baking dish and top with remaining 1/4 cup mozzarella and the parmesan cheese.
  8. Cover with foil and bake for 30 minutes at 350 degrees.
  9. After 30 minutes remove the foil, continue to bake another 10-15 minutes (or longer if you want the top golden brown).

*If you have regular sausage, not Italian sausage, add the following:
2 oz. red wine
1 1/2 teaspoons salt
1 1/2 teaspoons fennel
black pepper
1/4 teaspoon coriander
1/2 teaspoon oregano
1 clove garlic
1/8 teaspoon caraway seed
